Enjoy this easy dinner that is rich in flavor!
Ingredients
2 chicken breasts
3 tbsp coconut oil
1 onion, sliced or diced
1 red bell pepper, sliced
or diced
1 can black beans
1 cup raw or organic shredded cheese, cheddar
2 tbsp salsa
Seasonings: salt,
pepper
, cumin,
garlic powder,
chili powder
Preparation
Step 1
Bake chicken.
Cut fat off and place chicken in brine (warm saltwater) for 15 minutes. Rinse off and pat dry. Place in pan and rub both sides with oil. Add seasonings. Bake seasoned chicken at 450° in a small baking dish until cooked through, approximately 15-18 minutes.
Step 2
Sauté veggies in coconut oil in frying pan.
Step 3
Place the sautéed veggies on top of the chicken once done.
Step 4
Cover with black beans. Top with cheese. Placed back in the oven to melt the cheese. Top with optional toppings and salsa.
